Simple French Toast

Tastes like a weekend brunch, but simple enough for the weekday.


2 eggs
1/4 cup milk
1 tsp cinnamon
1/4 tsp all spice
3-4 slices whole wheat bread

1/2 cup blueberries (fresh or frozen)
3-4 strawberries (fresh or frozen)
1/4 cup maple syrup
1-2 tbsp walnuts

Scramble eggs in a bowl using a whisk or fork. Add milk, cinnamon, and allspice and mix well. Heat a pat of butter in a skillet over medium heat. Dip bread into egg mixture to coat and add to the pan. Cook until browned, about 4-5 minutes, flip and cook on the other side. Repeat this dipping and cooking process with the bread until all egg mixture has been used. (Note: number of slices might change depending on the size of the bread)

If using frozen fruit for topping, add to a bowl and microwave with maple syrup for 1 minute on high. If using fresh, heat maple syrup before topping toast.
