Ingredient: Pinto Beans

Simple Vegetarian Quesadillas
Ingredients
2 whole wheat tortillas
1/2 cup cheddar or mexican-style blended cheese
Taco seasoning to taste
1/2 cup chopped onion
1-2 tsp oil of choice
Arugula or leafy green lettuce
Diced tomatoes

Preparation
Saute onion in a skillet with oil until translucent. Add pinto beans (drained) and taco seasoning and heat through. In a separate, non-stick skillet heat tortilla on both sides and top with half of the cheese. Allow to melt and top with pinto bean mixture. Fold in half and heat through, flipping once. Add arugula or lettuce plus the tomatoes inside the tortilla or serve on the side. Optional: top with sour cream, salsa, avocado, or hot sauce.

Simple Taco Salad
Same as above without the tortilla. Mix all ingredients in a bowl and use salsa of choice as a dressing.
